Ingredients

  • 1 1/2 Lb Chicken Breasts, cubed
  • 1 t Salt
  • 1/2 t Black Pepper
  • 2 t Chili Powder
  • 1 t Smoked Paprika
  • 1 t Cumin
  • 1 t Onion Powder
  • 1 t Garlic Powder
  • 1 1/2 Cans Corn, drained
  • 1/2 t Salt
  • 1/2 t Pepper
  • 1 t Chili Powder
  • 1/2 t Smoked Paprika
  • 1/2 t Cumin
  • 1/2 t Onion Powder
  • 1/2 t Garlic Powder
  • 1/2 Bunch Cilantro, chopped
  • 1/2 M/L Red Onion
  • 1 M Jalapeno, deseeded and diced
  • 1 Lime, juiced
  • 1 C Non-fat Greek Yogurt
  • Tajin to sprinkle on top

Instructions

  • Mix the chicken with the seasonings below the chicken and above the corn. Cook in a large skillet until cooked through.
  • Cook the corn o get a little color on them.
  • Mix the rest of the ingredients in a bowl (minus the tajin).
  • Add the corn to the bowl and mix. In a bowl place some Spanish cauliflower rice (if using), top with chicken, and then top with the elote mixture. Spri8nkle with tajin.
