Hot Honey Sheet Pan Dinner

Ingredients

  • 4 C Diced, cubed Sweet Potatoes
  • 1 1/2 lb Chicken Breasts, cut into chunks
  • 1 M-L Red Onion, cut into large pieces
  • 1 T Olive Oil
  • 2 t Garlic Powder
  • 1 t Onion Powder
  • 2 t Smoked Paprika
  • 1 t Salt
  • 1/2 t Black pepper
  • 1/4-1/2 t Cayenne Pepper, optional

Toppings: 1-2 fresh jalapenos, sliced 2 oz Crumbled feta (you can use reduced fat or fat-free), 2 tablespoons hot honey

Instructions

  • Mix together all ingredients except the toppings
  • Bake at 425 degrees for 15 minutes. Remove and mix everything around and bake for an additional 10-15 minutes. You want the sweet potatoes soft.
  • Add toppings and bake for about 5 more minutes. You can broil if you want.
  • I served ours with more veggies I roasted at the same time.
