Low Carb Asian Lettuce Wraps

Ingredients

  • 1 lb Ground Beef
  • 1 Medium Onion diced
  • 8 oz Packaged of Mushrooms diced fine (I use a food processor to make it much faster) and optional
  • 1 Package of Frozen Cauliflower Rice Optional, it adds bulk and some extra nutrtion
  • 1 T Minced Garlic
  • 1 T Ginger Paste
  • Salt and Pepper to Taste
  • 1/4-1/2 C Soy Sauce or Bragg’s Liquid Aminos
  • 1 T Sugar Substitute to equal to 1 T sugar
  • 1 1/2 T Sesame Seed Oil
  • 1 T Fish Sauce Optional
  • Lettuce to hold your meat mixture- Boston Bibb lettuce or whatever you can find, green onions, shredded carrots, chopped cilantro, etc. for toppings

Instructions

  • Cook cauli rice with a cup of water for at least 5 minutes in a large skillet.
  • Add your ground beef with the onion, garlic, and mushrooms (if desired) and cook until meat is cooked through.
  • Add soy sauce, sesame seed oil, sweetener, ginger, fish sauce to meat and veg mixture. When the sauce is mixed in well, taste and add salt and pepper. Soy sauce is salty so I like to wait to add the salt.
  • Serve in lettuce cups. Top with green onions, bean sprouts, shredded carrots, and cilantro.
