Cook cauli rice with a cup of water for at least 5 minutes in a large skillet.
Add your ground beef with the onion, garlic, and mushrooms (if desired) and cook until meat is cooked through.
Add soy sauce, sesame seed oil, sweetener, ginger, fish sauce to meat and veg mixture. When the sauce is mixed in well, taste and add salt and pepper. Soy sauce is salty so I like to wait to add the salt.
Serve in lettuce cups. Top with green onions, bean sprouts, shredded carrots, and cilantro.
