Instructions
In a medium to large skillet place your bacon. Cook until it the bacon is cooked through.
Remove bacon to a paper towel to drain and dry.
Whisk the eggs and add the salt and pepper. Remove most of the fat in the skillet left by the bacon. I reserved close to a tablespoon. Pour in whisked and cook over medium heat.
Break up your bacon into small pieces.
When the eggs are almost cooked through, add the bacon to the eggs.
Mix to combine the two. Remove from heat when it is cooked to your liking.
Place your cheese into the tortilla.
Place egg mixture on top of the cheese. Add the rest of the ingredients desired.
