Preheat oven to **325°F**. Line an **8x8-inch baking dish** with parchment paper.
In a bowl, combine the almond flour, coconut flour, brown sweetener, powdered sweetener, cinnamon, baking powder, and salt.
Add the melted butter, eggs, vanilla, and almond extract. Mix until combined.
Press about **2/3 of the mixture** into the bottom of the prepared baking dish. Reserve the remaining mixture for the crumble topping.
For the apple filling, melt 2 tablespoons butter in a skillet over medium heat. Add the finely diced apples, brown sweetener, cinnamon, lemon juice, and a pinch of salt.
Cook for about **8–10 minutes**, stirring occasionally, until the apples begin to soften.
Stir **2 tablespoons of the caramel sauce** into the apples.
Spread the apple mixture evenly over the crust.
Drizzle another **2 tablespoons caramel sauce** over the apple layer.
Pinch small pieces of the reserved crust mixture over the apples. It does not need to completely cover the top. Sprinkle with the chopped pecans.
Bake for **35–45 minutes**, or until the edges are golden and the center is set.
For the cream cheese drizzle, stir together the whipped cream cheese, powdered sweetener, vanilla, and enough almond milk or cream to reach a drizzling consistency. Allow the bars to cool completely. For the cleanest slices, chill them before cutting.
Slice when chilled.
If desired drizzle with additional caramel sauce when serving.
