Add the olive oil to a large skillet over medium heat.
Cook for a few minutes and add the garlic. Cook for 1-2 minutes.
Add the cooked cauliflower rice. Cook for at least 10 minutes. You want the rice to be soft and take on the flavors of the onion and garlic.
Stir in the cream cheese and mayo. Mix well. Add the salt, pepper, and curry powder. Mix again.
Add chicken, broth, and broccoli. Stir well. Add 1 cup of the shredded cheese and stir. Put into a 9x13 dish.
Bake at 350 for 20 minutes. Top with the remaining cheese and bake for 5 more minutes.
Serve hot.
