Low Carb Chicken DIvan

Ingredients

  • 1 1/2 Lb Precooked and diced Chicken Breasts
  • 4 C Steamed Broccoli Florets
  • 1 Med Onion, diced
  • 2 t Minced Garlic
  • Pck Cauliflower Rice, cooked in the Microwave
  • 8 oz Cream Cheese
  • 1 C Mayo
  • 1 t Salt
  • 1/2 t Pepper
  • 2 t Curry Powder
  • 1/4 C Water or Broth
  • 2 C Shredded Cheddar
  • 1 t Olive Oil

Instructions

  • Add the olive oil to a large skillet over medium heat.
  • Cook for a few minutes and add the garlic. Cook for 1-2 minutes.
  • Add the cooked cauliflower rice. Cook for at least 10 minutes. You want the rice to be soft and take on the flavors of the onion and garlic.
  • Stir in the cream cheese and mayo. Mix well. Add the salt, pepper, and curry powder. Mix again.
  • Add chicken, broth, and broccoli. Stir well. Add 1 cup of the shredded cheese and stir. Put into a 9x13 dish.
  • Bake at 350 for 20 minutes. Top with the remaining cheese and bake for 5 more minutes.
  • Serve hot.
