Place chicken and broccoli in your crockpot. Mix together heavy cream, almond milk, chicken broth, garlic, onion powder, Italian seasoning, salt and pepper. Pour on top of the chicken and broccoli. Top with parmesan cheese.
Cook on low 4-5 hours or high for 2-3 hours. When finished, remove chicken and dice.
If using xanthan gum, remove the medium to big broccoli pieces. Cut them into bite size pieces. Add 1/4 tsp of xanthan gum at a time. I used 1/2 tsp total. Make sure you whisk for a few minutes before adding more.
When thickened, add the broccoli and chicken back to the crockpot and stir. Taste it and see if it needs more salt or flavor.
Serve over pasta of choice.
