Low Carb Granola Bars

Ingredients

  • 3 C Nuts: I used pecans, sliced almonds, and cashews
  • 1 C Old Fashioned Oats
  • 1/4 C Ground Flax
  • 1/2 t Cinnamon
  • 1/2 C Brown Swerve
  • 1/2 C Heavy Cream
  • 1/2 C Butter
  • 1/4 C Peanut Butter
  • 1/4 C Sugar-free Chocolate chips or chopped 85% bar, plus a little bit to sprinkle on top

Instructions

  • In a medium saucepan, add butter, heavy cream, and sweetener. Bring to a slow boil.
  • While bringing the mixture to a boil, mix together nuts.
  • Add flax and stir.
  • Add oats and cinnamon. Stir.
  • Add chocolate chips and stir. Or dump all of the above ingredients together and stir. I don't know why I did it like this.
  • Once the mixture turns a nice brown color, add vanilla and peanut butter.
  • Scrape the cooked mixture on top of the nuts and oats, and stir.
  • Once mixed, place in a 9x13 pan. I lined it with aluminum foil. Sprinkle with extra chocolate, if desired. Press into the mixture.
  • Place in freezer or fridge. Once solid, remove from fridge. Cut into 18 or 12 pieces. Store in fridge.
