In a medium saucepan, add butter, heavy cream, and sweetener. Bring to a slow boil.
While bringing the mixture to a boil, mix together nuts.
Add flax and stir.
Add oats and cinnamon. Stir.
Add chocolate chips and stir. Or dump all of the above ingredients together and stir. I don't know why I did it like this.
Once the mixture turns a nice brown color, add vanilla and peanut butter.
Scrape the cooked mixture on top of the nuts and oats, and stir.
Once mixed, place in a 9x13 pan. I lined it with aluminum foil. Sprinkle with extra chocolate, if desired. Press into the mixture.
Place in freezer or fridge. Once solid, remove from fridge. Cut into 18 or 12 pieces. Store in fridge.
