Low Carb Pumpkin Mousse

Ingredients

  • 1 1/2 C Heavy Cream
  • 8 oz Block Cream Cheese, softened
  • 7-8 oz Canned Pumpkin Puree
  • 1/2 C Powdered Swerve, or alternative
  • 2 T Brown Sugar Swerve
  • 1 t Pumpkin Pie Spice
  • 1 Pinch Salt

Topping: Whipped cream and pumpkin pie spice

Instructions

  • Beat heavy cream until stiff peaks form.
  • Scrape your whipped cream into a bowl. Add your cream cheese to the bowl and beat for about a minute.
  • Add your pumpkin, spice, salt, and brown sugar alternative to the cream cheese mixture. Beat until combined. Scrape the bowl a few times to make sure everything is mixed well. Add the whipped cream to the cream cheese mixture and combine.
  • Combine well.
  • Serve in desired glass and top with whipped cream and pumpkin spice.
