Mexican Deviled Eggs
Ingredients
- 10-12 Boiled Eggs
- Meat of choice
- 1/2 - 1 C Binding agent, I used blended cottage cheese
- 1-2 T Taco Sauce, more if desired
- Taco Seasoning to taste
Desired Toppings: Shredded cheese, onions, jalapenos, tomatoes, cilantro, avocado, guacamole, salsa, tajine, etc.
Instructions
- Place your yolks in a bowl and mash. Add some taco seasoning and your binding agent. Mix, taste.
- Add more seasonings, binding agent, and taco sauce. Mix well.
- I placed the mixture in a baggie. I put everything in one corner, twisted the top so there was a little pressure building up and snipped a little off the end. And then squeezed some in each egg. The duck eggs were a lot bigger than the chicken eggs.
- Top with meat, if desired.
- If desired, make up some toppings.
- Top as desired.
