Mexican Deviled Eggs

Ingredients

  • 10-12 Boiled Eggs
  • Meat of choice
  • 1/2 - 1 C Binding agent, I used blended cottage cheese
  • 1-2 T Taco Sauce, more if desired
  • Taco Seasoning to taste

Desired Toppings: Shredded cheese, onions, jalapenos, tomatoes, cilantro, avocado, guacamole, salsa, tajine, etc.

Instructions

  • Place your yolks in a bowl and mash. Add some taco seasoning and your binding agent. Mix, taste.
  • Add more seasonings, binding agent, and taco sauce. Mix well.
  • I placed the mixture in a baggie. I put everything in one corner, twisted the top so there was a little pressure building up and snipped a little off the end. And then squeezed some in each egg. The duck eggs were a lot bigger than the chicken eggs.
  • Top with meat, if desired.
  • If desired, make up some toppings.
  • Top as desired.
