Pumpkin Pie Chia Seed Pudding- Low Carb and THM S

Ingredients

  • 2 T Chia Seeds
  • 1/2 C Pumpkin Puree (not pumpkin pie filling)
  • 3/4 C Unsweetened Almond milk (if you want it thinner, add an extra tablespoon or two)
  • 1/2-1 t Vanilla
  • 1/2 t Pumpkin Pie Spice
  • Pinch Salt
  • 2 T Sweetener- I used Powdered Swerve You might want it a little sweeter. If so go slow so you don't end up with too much

Instructions

  • In small to medium size bowl, mix together everything but the milk. Pumpkin pie spice (maybe the cinnamon) doesn't mix well in liquid. So by mixing it with everything else first, it will mix in the pudding just fine.
  • Add milk and carefully mix. You might want to add half of the milk at a time.
  • Pour into containers of choice. Place in fridge at least 30 minutes. Stir before eating.
  • I topped mine with a little whipped cream.
