In a large skillet add your olive oil and onion. Cook for a few minutes. Add garlic, bell pepper (if using), and seasonings. Cook for minute or two.
Add ground beef. Cook until meat is cooked through.
Add cabbage. Depending on the size of your skillet and your cabbage, you might have to add the cabbage in in batches.
Cook for a few minutes and add the tomato products.
Continue cooking until cabbage is done to your liking. Taste and see if it needs more seasonings. Top with cheese.
Put a lid on top to help cheese melt faster or just serve right away.
Serve hot.
