Sausage and Kale Stuffed Delicata Squash

Delicata Squash

Sausage, I used breakfast

Minced Garlic

Kale, add more if desired

Parmesan Cheese
Olive oil, salt, pepper, red pepper flakes, all as desired
Instructions
Cut the squash in half lengthwise and deseed them.
Score the squash if desired.
Add a little oil all over the squash. Season with salt and pepper. Flip over and bake, cut side down for 25-30 minutes at 375 degrees, or until soft.
Make filled. Cook sausage.
Remove sausage from skillet. Add a little oil, if needed to the skillet. Add diced onion. After a few minutes, add the garlic.
Add the kale.
Cook until soft.
Remove the squash from the oven when cooked.
Flip over. Sprinkle with parmesan cheese.
Fill with stuffing. Top with more parmesan cheese. Bake about 5 more minutes.
I had some leftover. Great for a quick breakfast or lunch the next day.
Remove from the oven.
Serve as desired.
