Preheat a skillet over medium to medium high. Sprinkle a little salt and pepper on the roast. Add a little oil to your skillet and sear all sides of the roast. I used my Ninja Foodi to sear and slow cook the barbacoa.
While you are searing the roast, combine your dry ingredients.
Remove seared roast to a crockpot and add broth.
add onion, garlic, and seasonings. Cook on low for 8-9 hours.
Once cooked, shred. Add the juice of the lime and the cilantro.
Serve however desired.
