So I did this a little different than normal. Mash your bananas and then mix in the cinnamon.
Then add the egg whites and mix. Add the sugar sub and mix. Next add the vanilla and almond milk. Mix well.
To the oats add the salt and baking powder. Toss. Add the oats to the liquid.
In a 9x13 pan, sprayed with non-stick spray, layer about half of the oatmeal mixture
Sprinkle 2 cups of the blueberries over the oatmeal mix. We do this so you don't end up with green/gray baked oatmeal. Top with the rest of the oatmeal mixture and then the rest of the berries.
Your bake time will depend on if you used fresh or frozen berries. I baked at 350 degrees for 40 minutes. If you used fresh, I would start checking after 30 minutes.
Serve warm with a little light whipped cream, if desired. You can also serve in a bowl with a little almond milk.
