THM E Baked Blueberry Oatmeal

Ingredients

  • 4 C Rolled Oats (old fashioned)
  • 4 C Wild Frozen Blueberries
  • 1/2 t Salt
  • 1/2 C Brown Sugar Substitute
  • 1 t Baking Powder
  • 2 Ripe Bananas
  • 1 C Egg Whites
  • 1 1/2 C Unsweetened Almond Milk
  • 2 t Ground Cinnamon
  • 2 t Vanilla

Instructions

  • So I did this a little different than normal. Mash your bananas and then mix in the cinnamon.
  • Then add the egg whites and mix. Add the sugar sub and mix. Next add the vanilla and almond milk. Mix well.
  • To the oats add the salt and baking powder. Toss. Add the oats to the liquid.
  • In a 9x13 pan, sprayed with non-stick spray, layer about half of the oatmeal mixture
  • Sprinkle 2 cups of the blueberries over the oatmeal mix. We do this so you don't end up with green/gray baked oatmeal. Top with the rest of the oatmeal mixture and then the rest of the berries.
  • Your bake time will depend on if you used fresh or frozen berries. I baked at 350 degrees for 40 minutes. If you used fresh, I would start checking after 30 minutes.
  • Serve warm with a little light whipped cream, if desired. You can also serve in a bowl with a little almond milk.
