THM E Filipino Chicken

Ingredients

  • 1.5-2 Lb Boneless Skinless Chicken Breasts
  • 1 T Minced Garlic
  • 1/3 C Bragg's Liquid Aminos or Soy Sauce
  • 1/3 C Vinegar, I used Apple Cider
  • 3 Dried Bay Leaves, optional
  • 1 T Olive Oil
  • 1 C Water
  • 2 T Brown Sugar Substitute
  • 1 Sm-Md Onion, diced
  • 1/2 t Pepper

Optional Toppings: Sesame Seeds, Green Onions, Red Pepper Flakes

Instructions

  • If you want to freeze this or make this a marinade, combine all of the ingredients from the chicken breasts through the olive oil and put in a baggie. When ready to cook, dump contents into a crockpot. Add remaining ingredients and cook on low for 6 hours or high2-3 hours.
  • When chicken is cooked, remove from the pot and allow to cool for a minute. Cut into bite sized pieces, or shred the chicken. Remove bay leaves, if used. Add chicken back to pot.
  • In a bowl add your noodles of choice.
  • Scoop up chicken on top of the noodles. Add as much sauce as you like. Top with diced green onions and sesame seeds if desired.
