Trim Healthy Mama Protein Breakfast Cookie

Ingredients

  • 2 Rice Cakes, crumbled
  • 1 Single Serve Container Yogurt Flavored as desired
  • 1 Scoop Protein Powder My protein powder is 2 scoops per serving, so I used 1/2 of a serving

Toppings as desired: Diced fruit, chopped nuts, drizzle of nut butter, sprinkles, chocolate chips, etc.

Instructions

  • Crush the rice cakes.
  • Dump the container of yogurt in a bowl with the protein powder. Pictured is strawberry yogurt and vanilla protein powder.
  • Stir until combined.
  • Add any add-ins, if desired. I stirred in 2 chopped strawberries.
  • Dump in the rice cakes. Stir. I placed a piece of parchment paper on a plate. I scooped out the mixture onto the plate.
  • Flatten out. And then place in the freezer, about an hour or longer. I will try and make 2 cookies from the mix next time. The cookie didn't thaw all the way, but was getting soft before I finished.
