Crockpot Chicken Fajitas

These fajitas are so crazy easy, you should make them today. If you follow the trim healthy mama way of eating, these can either be an s or an e. If you want to make these into a fuel pull, I am sure you can. Just follow the guidelines for the amount of lean protein in a fp setting.

The ones pictured are definitely a trim healthy mama s meal, however these can be used in a low carb or keto meal plan. I used low carb fajita tortillas, shredded cheddar, sour cream and avocado. I didn’t have cilantro (my Aldi was sold out). If you want to make this an e, use salsa, cilantro, green onions, etc., any trim healthy mama approved e toppings. Have some fat-free refried beans on the side. Maybe some baked tortilla chips. You can also top them with some non-fat Greek yogurt if you want.

This is such an easy recipe that you can make the day you want to eat it or make it part of your meal prep. It can be frozen, thawed the day before you want to eat it and put it in your crockpot in the morning. Let is cook all day on low. I don’t add the bell peppers at the beginning of the cooking time. I find that they really disappear and become kind of mushy if they cook all day. I also don’t shred the meat. I try to slice it so it is a bit more like fajita meat. The meat is pretty tender when it is finished cooking. You can make this into a taco salad or serve the meat in lettuce leaves instead of the frankenfood low carb tortillas.

Equipment

  • Crockpot

Ingredients

  • 1 1/2- 2 lb Boneless, Skinless Chicken Breast
  • 2 Cans Diced Tomatoes with Green Chilies, drained
  • 2 Lrg Bell Peppers, Sliced in Strips Whatever color you want
  • 1 Lrg Onion, Sliced in Strips
  • 1 Tbl Minced Garlic
  • 2 Pckg Taco Seasoning, I use DIY
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

Instructions

  • Put your drained tomatoes with green chilies in your crockpot. Top with chicken breasts and seasoning. Turn on low and cook for 3 hours.
  • After the hours are over, add the bell peppers and onion to the crockpot. Cook another 3-5 hours.
  • Remove chicken from crockpot and allow to cool. Carefully slice into strips.
  • Add the sliced chicken back to crockpot and stir.
  • Serve the hot chicken in whatever fuel setting you want.
