Slow Cooker French Onion Chicken (Easy Low Carb Dinner)
If you love French onion soup, you’re going to love this Slow Cooker French Onion Chicken! We’re talking tender chicken breasts, sweet caramelized onions, a rich, savory sauce, and melted Gruyère cheese. All those delicious French onion flavors turned into an easy, comforting dinner!
And the best part? You don’t need canned soup, packaged onion seasoning, or heavy cream to make it taste amazing. We’re using real ingredients to build that rich flavor.
Now, I will tell you that there’s one step I don’t recommend skipping: caramelizing the onions. It takes a little extra time at the beginning, but it’s absolutely worth it! Once those onions are beautifully golden brown, your slow cooker takes over most of the work.
This recipe is low carb, Trim Healthy Mama friendly, and perfect for a cozy family dinner.
What Is French Onion Chicken?
French onion chicken takes everything we love about traditional French onion soup and turns it into a hearty chicken dinner.
Instead of serving caramelized onions and rich beef broth as a soup topped with bread and cheese, we’re cooking chicken breasts in that delicious French onion-inspired sauce and finishing everything with melted Gruyère.
The combination of sweet, caramelized onions, savory beef broth, Worcestershire sauce, balsamic vinegar, and herbs gives this dish wonderful depth of flavor.
And that melted cheese on top? It’s the perfect finishing touch!

Why You’ll Love This Slow Cooker French Onion Chicken
There are several reasons this recipe deserves a spot on your dinner rotation.
-
Rich French onion flavor: Real caramelized onions make the sauce taste incredible.
-
No canned soup: Everything is made with simple ingredients and homemade seasoning.
-
Low carb and THM friendly: Enjoy a comforting, cheesy chicken dinner without bread or flour-based gravy.
-
Made with chicken breasts: A leaner option that still tastes rich and satisfying.
-
Slow cooker convenience: After caramelizing the onions, your slow cooker handles most of the cooking.
-
Family-friendly: Serve it with your favorite vegetables or sides for a delicious dinner everyone can enjoy.
Why Caramelizing the Onions Matters
If there’s one thing I want you to remember about this recipe, it’s this: don’t rush the onions!
I know it can be tempting to toss everything into the slow cooker and call it done, but caramelizing the onions beforehand makes such a difference.
When onions cook slowly in butter, their natural sugars develop a deep, sweet, savory flavor. They also turn a beautiful golden brown, which helps create that classic French onion soup taste.
Simply cooking raw onions in the slow cooker will soften them, but you won’t get the same caramelized flavor.
Here are a few tips for getting them just right:
-
Slice your onions thinly and as evenly as possible.
-
Cook over medium-low heat, stirring occasionally.
-
Give them approximately 25–35 minutes to develop that beautiful golden color.
-
If they begin sticking, add a splash of the measured beef broth and scrape up those flavorful browned bits.
-
Add the garlic during the last minute so it doesn’t burn.
Those browned bits in the skillet are packed with flavor, so make sure you get them into the slow cooker!

What Is the Best Cheese for French Onion Chicken?
Traditionally, French onion soup is topped with Gruyère cheese, and that’s what I love using in this recipe.
Gruyère has a wonderfully rich, slightly nutty flavor that pairs beautifully with the caramelized onions. It also melts into a delicious, creamy topping.
However, Gruyère can be expensive, and I completely understand wanting a more budget-friendly option.
Swiss cheese works beautifully, too!
You can sprinkle the cheese over the chicken directly in the slow cooker, cover it, and let it melt.
If you want that beautiful, lightly browned cheese topping you see on traditional French onion soup, transfer the chicken and onions to an oven-safe baking dish and broil for a couple of minutes.
Just keep an eye on it because cheese can go from golden brown to burned pretty quickly!
How to Keep Chicken Breasts From Drying Out in the Slow Cooker
We’re using boneless, skinless chicken breasts for this recipe because they’re high in protein and a little lighter than chicken thighs.
However, chicken breasts can dry out if you cook them too long.
Here are my tips for keeping them tender:
-
Cook on LOW for approximately 3–4 hours.
-
Begin checking around the 2½–3-hour mark, especially if your chicken breasts are thin.
-
Use an instant-read meat thermometer rather than relying only on cooking time.
-
The chicken is done when the thickest part reaches 165°F.
-
Avoid leaving the chicken cooking after it reaches the proper temperature.
Every slow cooker cooks a little differently, so keeping an eye on the temperature is the best way to prevent dry chicken.
And remember, the chicken breasts will be covered with that delicious onion sauce, which adds plenty of flavor!

How to Make the French Onion Sauce Thicker
The onions and chicken release some additional liquid as they cook, so you’ll end up with a delicious, savory sauce.
You can absolutely serve it just as it is!
However, if you prefer something a little thicker, almost like gravy, I’ve included an optional glucomannan thickener in the recipe card.
Glucomannan is a low-carb thickener that works well for Trim Healthy Mama recipes.
A little goes a long way!
Mix a small amount with cool water before adding it to the hot cooking liquid. Start with just ½ teaspoon and allow it to thicken before deciding whether you need more.
You don’t want to add too much or your sauce may become overly thick.
Is French Onion Chicken Trim Healthy Mama Friendly?
Yes! This Slow Cooker French Onion Chicken is a Trim Healthy Mama S (Satisfying) meal.
The chicken breasts provide plenty of lean protein, while the butter and Gruyère cheese add satisfying fats.
We’re also skipping traditional flour-based thickeners and using glucomannan if the sauce needs thickening.
The caramelized onions do contain natural carbohydrates, but when divided among six servings, the amount is generally compatible with a THM S meal, provided the other ingredients are also plan-friendly.
One of the things I love about this recipe is that it feels like a rich, indulgent comfort-food dinner without being excessively heavy.
And if you’re trying to lighten up some of your heavier S meals, using chicken breasts instead of thighs and keeping the cheese to approximately one cup for the entire recipe is a great way to do that.

What to Serve With Slow Cooker French Onion Chicken
You’re going to want something to soak up that delicious onion sauce!
Here are some of my favorite low-carb, THM S-friendly serving ideas.
Mashed Cauliflower
This is probably my favorite pairing. Creamy mashed cauliflower is wonderful underneath the chicken with plenty of caramelized onions and sauce spooned over everything.
Roasted Green Beans
Roasted green beans add a nice contrast to the rich, cheesy chicken. Season them simply with garlic, salt, pepper, and a little olive oil.
Roasted Asparagus
A quick, easy side that pairs beautifully with the savory French onion flavors.
Sautéed Mushrooms
If you love mushrooms, they’re absolutely delicious with caramelized onions and beef broth. You could even serve the chicken over a bed of sautéed mushrooms.
Simple Green Salad
Sometimes a fresh salad is all you need to balance a comforting dinner like this.
If you’re feeding family members who aren’t following Trim Healthy Mama, you can always offer mashed potatoes, rice, or crusty bread alongside their portions.
Can I Use Chicken Thighs Instead of Chicken Breasts?
Absolutely!
Boneless, skinless chicken thighs work well in slow cooker recipes because they contain a little more fat and are more forgiving if they cook longer.
They’ll make the dish slightly richer, but they’ll still work with the French onion flavors.
I chose chicken breasts for this version because I wanted plenty of protein without making the meal quite as heavy.
If you substitute thighs, cooking time may vary. Check for doneness with a thermometer rather than relying strictly on the cooking time for chicken breasts.

How to Store and Reheat Leftovers
This recipe makes approximately six servings, so you may even have leftovers for lunch the next day!
Refrigerator: Store leftover chicken, onions, and sauce in an airtight container in the refrigerator for up to four days.
Reheating: Reheat gently in a covered skillet over medium-low heat or in the microwave until heated through to 165°F. Add a little beef broth if the sauce has thickened too much.
Freezing: The cooked chicken and onion sauce can be frozen in an airtight, freezer-safe container for approximately 2–3 months for best quality. For the best texture, I recommend freezing before adding the cheese and adding fresh cheese when reheating.
Slow Cooker French Onion Chicken FAQs
Can I skip caramelizing the onions?
You can put raw onions directly into the slow cooker, but I really don’t recommend it for this recipe.
Caramelizing the onions develops that rich, deep flavor that makes French onion soup so delicious. It’s worth the extra time!
How long does French onion chicken take in the slow cooker?
Plan on approximately 3–4 hours on LOW, depending on the thickness of your chicken breasts and how your slow cooker cooks.
Start checking the chicken around 2½–3 hours and remove it from the heat once it reaches 165°F.
Can I use chicken thighs instead of breasts?
Yes! Boneless chicken thighs are a great alternative. They’ll give you a slightly richer dish and are generally more forgiving in the slow cooker.
Can I use Swiss cheese instead of Gruyère?
Absolutely! Swiss cheese is a delicious, budget-friendly alternative that melts beautifully.
Can I make this recipe without beef broth?
Beef broth gives this dish its classic French onion soup flavor, but chicken broth can work if that’s what you have available.
The flavor won’t be quite as rich or beefy, but the caramelized onions and seasonings will still make a delicious sauce.
Can I make French onion chicken ahead of time?
Yes! You can caramelize the onions a day ahead and store them in the refrigerator.
When you’re ready to cook, add them to the slow cooker with the chicken and remaining ingredients.
This is a great way to make dinner prep even easier on a busy day.

Do I have to broil the cheese?
Not at all!
You can sprinkle the Gruyère over the chicken during the final few minutes of cooking, cover the slow cooker, and allow it to melt.
Broiling simply gives the cheese that beautiful golden topping.

- Cook for approximately **25–35 minutes**, stirring occasionally, until the onions become soft, deeply golden brown, and caramelized. **Tip:** Don't rush this step! Caramelizing the onions creates the deep, rich flavor that makes this dish taste like French onion soup.

- If the onions begin sticking or browning too quickly, add a tablespoon or two of beef broth and scrape up the browned bits. Add the minced garlic during the final minute of cooking.

- Pour approximately ¼ cup of the measured beef broth into the skillet and scrape up any remaining browned bits.

- In a bowl, whisk together: Remaining beef broth, Worcestershire sauce, Balsamic vinegar, Dijon mustard, if using, Homemade French onion seasoning
