What’s in These High Protein Chicken Bowls?
These meal prep bowls have four delicious components that work really well together.
Smoky Cilantro Lime Chicken
We’re using boneless, skinless chicken breasts cut into bite-sized pieces and seasoned with smoked paprika, cumin, garlic, onion, and other simple seasonings.
The chicken cooks in a skillet until lightly golden, then gets a splash of fresh lime juice to brighten everything up.
Cutting the chicken into similar-sized pieces helps it cook evenly. Be sure to cook it to an internal temperature of 165°F without overcooking it.
Cilantro Lime Cauliflower Rice with Black Beans
Instead of using traditional rice, we’re combining cauliflower rice with black beans, cilantro, and lime juice.
I chose cauliflower rice because we’re already including sweet potatoes and black beans in these bowls.
The cauliflower rice adds volume without adding a large amount of additional carbohydrates, while the black beans provide fiber and make the bowls more filling.
One important tip: don’t let your cauliflower rice get watery!
Cook it in a large skillet so the moisture can evaporate, I cook for about 5 minutes and then add some chicken broth. I cook the cauliflower rice like this to help with the taste and texture. Make sure your black beans are well drained before adding them.
Stir in the fresh cilantro and lime toward the end to keep those flavors bright.
Chili-Roasted Sweet Potatoes
I love adding roasted sweet potatoes to meal prep bowls!
They bring a little natural sweetness that tastes delicious with the smoky chicken and tangy salsa verde sauce.
Toss the diced sweet potatoes with the seasonings listed in the recipe card and spread them evenly on a baking sheet.
Try not to overcrowd the pan. You want those sweet potatoes to roast and develop some golden edges instead of steaming.
Cutting them into similar-sized pieces also helps everything cook evenly.

Creamy Salsa Verde Lime Sauce
Now let’s talk about the sauce!
This creamy salsa verde lime sauce is made with nonfat Greek yogurt, salsa verde, fresh cilantro, and lime.
It’s tangy, creamy, and adds another little boost of protein to the finished bowls.
Blend everything until smooth, adding a little water as needed to create a drizzle-friendly consistency.
Because salsa verde brands can vary in flavor and heat, I recommend tasting the sauce before making your final adjustments.
And here’s a meal prep tip: keep the sauce in a separate container until you’re ready to eat.
That way, you can reheat your chicken, cauliflower rice, and sweet potatoes, then add the cool, creamy sauce right before serving.
Are These Chicken Bowls Trim Healthy Mama Friendly?
Yes! These High Protein Cilantro Lime Chicken Bowls are designed to be a Trim Healthy Mama E (Energizing) meal.
We’re using lean chicken breasts and nonfat Greek yogurt for protein, along with sweet potatoes and black beans for healthy carbohydrates.
The cauliflower rice helps add volume without piling on additional carbs.
To keep these bowls in E territory, be mindful of how much added fat you use when cooking the chicken and roasting the sweet potatoes.
You’ll also want to divide the sweet potatoes and black beans appropriately among your servings so the total carbohydrate amount fits your THM E guidelines.
That’s one of the reasons I enjoy meals like this. You can have a flavorful, satisfying meal without needing a lot of added fat.
Tips for Making the Best Meal Prep Chicken Bowls
A little planning makes these bowls even easier to prepare.
Cut everything before you start cooking.
Dice the sweet potatoes and chicken, chop your cilantro, and get your seasonings ready.
Start with the sweet potatoes.
They need time in the oven, so I like getting them roasting while I work on the chicken and cauliflower rice.
Use a large skillet for the cauliflower rice.
This allows moisture to evaporate and helps prevent soggy cauliflower rice.
Don’t overcook the chicken.
Chicken breasts cook relatively quickly when cut into bite-sized pieces. Use a meat thermometer to check for doneness.
Make the sauce while everything cooks.
The creamy salsa verde sauce takes just a few minutes to blend together.
Store the sauce separately.
This makes reheating much easier and keeps the yogurt sauce fresh and creamy.

How to Assemble Your Cilantro Lime Chicken Meal Prep Bowls
Once everything is cooked, it’s time to put your bowls together!
-
Divide the cilantro lime cauliflower rice and black beans evenly among your meal prep containers.
-
Add a portion of smoky chicken to each container.
-
Divide the chili-roasted sweet potatoes among the bowls.
-
Spoon the creamy salsa verde lime sauce into separate small containers.
-
Allow the hot ingredients to cool briefly, then refrigerate promptly.
When you’re ready to eat, simply reheat the chicken, sweet potatoes, and cauliflower rice until hot, then drizzle with the cold salsa verde lime sauce.
You can also add a little fresh cilantro or an extra squeeze of lime right before eating.
How to Store and Reheat These Chicken Bowls
These bowls are perfect for making lunches ahead of time.
Refrigerator: Store the cooked chicken, cauliflower rice, black beans, and sweet potatoes in airtight containers for up to 3–4 days.
Sauce: Keep the creamy salsa verde lime sauce refrigerated in its own airtight container. Use within 3–4 days.
Reheating: Reheat the chicken and vegetable components until hot throughout, reaching 165°F. Add the cold sauce afterward.
Freezing: The cooked chicken, cauliflower rice, beans, and sweet potatoes can be frozen in freezer-safe containers. I would make the Greek yogurt sauce fresh rather than freezing it, since yogurt-based sauces can separate after thawing.
If you’re making a full week of lunches, consider freezing the portions you won’t eat within four days.
High Protein Cilantro Lime Chicken Bowl FAQs
Can I use regular rice instead of cauliflower rice?
Absolutely! Brown rice or white rice would both taste delicious with these flavors.
If you’re following Trim Healthy Mama, remember to account for the additional carbohydrates from the rice along with the beans and sweet potatoes.
Can I make these bowls with chicken thighs?
Yes, chicken thighs would work well with the seasonings.
However, chicken breasts are the better choice for keeping this particular recipe lean and THM E friendly.
Can I make the salsa verde sauce ahead of time?
Yes! You can blend the sauce ahead and refrigerate it in an airtight container.
Give it a good stir before serving because the consistency may change slightly as it sits.
Can I use frozen cauliflower rice?

Cook it uncovered in a large skillet so the extra moisture has a chance to evaporate before you add the black beans and fresh seasonings.
Can I leave out the black beans?

If you’re following THM, you’ll want to consider your overall carbohydrate balance when making substitutions.
