Low Carb Spinach Salad

I won’t lie and say this was a family favorite. The men in my house wouldn’t even try it! They said that strawberries don’t go on salads. Well, they are wrong. This salad was amazing! I would be wiling to take this to a gathering/potluck (when we finally get to do those again). No one will be able to tell this is low carb/trim healthy mama s. It might not be a favorite of some men, but all of the ladies that tried it, loved it. If you don’t need quite as much, cut the recipe in half. Also, if you aren’t going to eat it all at once, don’t dress the salad in the bowl, dress individual servings. Store the leftovers in the fridge and eat throughout the week.

If you aren’t concerned with all of the fat in the mayo or are dairy free, use all mayo in the dressing. I lightened it up by adding in some nonfat Greek yogurt to the dressing. The dressing is a nice compliment to the salad. The fresh berries, strong feta cheese, and purple onion with the poppy seed dressing are a perfect combination. This is a perfect summer dish. No need to heat up the house, grill some chicken to go with this salad. This dinner would be great for a hot day.

Low Carb Strawberry Spinach Salad

Ingredients

  • 6 C Baby Spinach, roughly torn Don't pack the spinach into the measuring cup
  • 1 Med Red Onion thinly sliced
  • 16 oz Strawberries, hulled and sliced
  • 4 oz Feta Cheese Crumbled
  • 1/4 C Nuts or Seeds, I used sunflower seeds
  • 1/4 C Mayo
  • 1/3 C Nonfat Greek Yogurt
  • 1 1/2 T White Wine Vinegar
  • 1 1/2 T Poppy seeds
  • 2-3 T Sweetener, I used powdered swerve
  • 1/2 t Dijon Mustard
  • 1/4 t Salt and Pepper

Instructions

  • Toss the spinach, strawberries, red onion, feta cheese, and nuts or seeds in a large bowl.
  • Mix the remaining ingredients in a smaller bowl.
  • You can add a few tablespoons of water if you find the dressing too thick.
  • Either add the dressing to the whole salad or dress individual bowls
