Creamy Low Carb Bacon Mushroom Casserole

This is one of those recipes that was born out of desperation. I had a crazy busy day and had nothing planned for dinner. I had one of my sons grab a package of hamburger meat from the freezer. I had cream cheese, bag of frozen riced cauliflower, sliced mushrooms, cheddar cheese, green onions, and a package of bacon bits. I pretty much threw all of this together and came up with this casserole. My hubby did say that it could use more of the creamy stuff, so you might want to add an extra 1/2 package of cream cheese. I thought it was just right and the kids didn’t complain.

This can be a complete meal as is. If you want to or need to add more, add a salad or something like that. Maybe a roasted vegetable or roasted vegetable medley. That would be a perfect addition to stretch this meal. I actually loved this and plan on making this again. It is one of those trim healthy mama s meals that uses the basics that many of us have in our kitchens. If you try it, like it or hate it, let me know. I do appreciate feedback.

My husband says this is the best cauli rice recipe we have tried so far. I have to agree. My only complaint is no where in the ingredients are the bacon bits. When I looked it over to see if I had everything I was happy I did. Then came the add bacon bits. Oops luckily I had bacon in the fridge I quickly cooked and crumbled. Thanks for another great meal.
