Delicious Cranberry and Apple Baked Oatmeal: THM E

This trim healthy mama e cranberry and apple baked oatmeal is delicious!

I don’t know what happened but somehow I didn’t get a single picture of it baked! I honestly don’t know what happened since I made this right before Christmas. You will have to trust me that this is as good as I say it is. Baked oatmeal is one of my favorite breakfasts. I can make up a 9×13 pan, eat it as many days in a week as I want and freeze the rest. Anytime I need an instant breakfast, I get a piece out of the freezer.

If you have extra cranberries around don’t know what to use them for, make this easy breakfast.

Cranberries are so good for you and they are so cheap! If you want to mix things up, use them in this recipe. It will easily become your favorite. Cold weather for me means no more cold breakfasts. I also don’t like getting up everyday and make a new breakfast. I am all about cooking/prepping once and eating for a bit.

A couple tips that might help when you make this.

I tossed the cranberries in some sweetener before mixing in. This coats the tart cranberries and makes them taste less tart. I added a little bit of chopped nuts to the top. If you plan on having this with a coffee with a teaspoon of fat in it, don’t add the nuts. We are encouraged to have the teaspoon of fat in our e meals and I like the nuts sprinkled on top for a little flavor and crunch.

Trim Healthy Mama E Cranberry and Apple Baked Oatmeal

Ingredients

  • 4 C Old Fashioned Oats
  • 2 t Cinnamon
  • 1 t Salt
  • 2 t Baking Powder
  • 1/2 t Ginger
  • 1 1/2 t Vanilla
  • 3/4 C Egg Whites
  • 2 C Fresh Cranberries, roughly chopped
  • 1 Med Apple, diced
  • 1 C Unsweetened Applesauce
  • 1 3/4 C Unsweetened Almond Milk, or other on plan milk
  • 1/2 C Sweetener
  • 2 T Sweetener
  • 1 Doonk Pure Stevia, if you don't have any, add a little more sweetener that you do have.
  • 2 T Chopped Nuts, pecans or walnuts

Instructions

  • In a large bowl mix oats, cinnamon, ginger, baking powder, and salt together.
  • Toss the cranberries with the sweetener in a small bowl.
  • Mix together the egg whites, almond milk, applesauce, sweeteners, and vanilla in a medium bowl. I used a whisk.
  • Mix the cranberries and chopped apple together.
  • Add the liquid to the dry ingredients. Stir. Add cranberries and apple mix, and stir until combined.
  • Pour into a greased 9×13 pan. Top with chopped nuts, if using, Bake at 350 degrees for 30 minutes. Check and see if it's done. You want it to not be jiggly.

    What sweetener do you use for this? Gentle Sweet? Super Sweet? Latanko?

      I used a sweetener that measures cup for cup equal to sugar. Swerve, monkfruit, erc.
