Instant Pot Keto Pot Roast

This roast is so easy to get going. It is more convenient to make than a crockpot roast. I say that because this is a one pot meal. You don’t heat up another pan to brown the roast. Everything is done in the instant pot. It will take about 1 1/2 hours or so for the roast to be done. I made this on a busy day where I was gone from home from 3:30 in the morning and home around 5 pm. I got this going in my instant pot as soon as I got home.

Everyone in the house loved it. Almost everyone went back for seconds. I am sure this will not disappoint at your home either.

If you don’t have an instant pot, this can easily be made in an instant pot. Sear the meat in a pan on your stove-top in a skillet and then dump everything into your crockpot. Cook on low for 8 hours, or until tender. I have said before that a crockpot is my favorite kitchen tool. However there are times that the instant pot comes in handy. I could have brought home take out the last time I made this, but thankfully, I made this instead.

Instant Pot Keto Roast


  • Instant Pot


  • 2.5 lb Chuck Roast
  • 1 Lrg Onion, cut into wedges
  • 2 Lg Carrots, peel and cut into chunks
  • 1 Zucchini, cut into chunks
  • 3 Stalks of celery, cut into chunks strings removed
  • 8 oz Button Mushrooms
  • 16 oz Radishes, tops and bottoms removed, halved if large
  • 2 Tbl Fat
  • 1 C Beef Broth
  • 1 T Worcestershire Sauce
  • 1 t Salt and Pepper
  • 1/2 t Each, Garlic and Onion Powder
  • 1 T Minced Garlic


  • Plug in your instant pot and take the lid off. Press the saute button. When it is hot, about 2 minutes later, add your fat to the pot.
  • Sprinkle salt and pepper onto your roast.
  • Place your roast into the pot on top of the fat.
  • Sear for a few minutes and flip over.
  • Top the roast with all of the veggies.
  • Combine broth with the seasonings and garlic. Stir and pour over roast and veggies.
  • Close lid and make sure vent is closed. Press manual 45 minutes. Allow to naturally release for 5 minutes. Carefully remove the lid.
  • Serve warm in a bowl.
