Low Carb Breakfast Burrito

We went camping not too long ago and the burritos were a hit with the family. I try to find recipes that fit the trim healthy mama eating plan that I can adapt for the family, or vice versa. One tip I have is to scramble and season your eggs before you go. I store the uncooked beaten eggs in cleaned water bottles. This time I ran out of time to get to that to do item. Our egg cartons were cardboard and falling apart. Here is my little hack that I came up with to save the rest of the egss.

The servings depends on the size of your tortillas.and how much filling you add to each tortilla. One thing I like to do to make sure everyone gets enough fuel to keep them going until lunch is to bring large watermelons. If they are still not quite full after two of these, they can have a large piece of watermelon.

Low Carb Breakfast Burritos

Ingredients

  • 1 Lb Breakfast Sausage
  • 12 Med Eggs, scrambled
  • Tortillas

Toppings: Shredded cheese, cilantro, salsa, jalapenos, avocado, sour cream, etc

    Instructions

    • Brown the breakfast sausage in a skillet, Add the beaten eggs to the same skillet.
    • Stir occasionally so that the eggs dont burn. Cook until eggs are cooked through.
    • Use your choice of low carb tortilla.
    • Add your egg and sausage filling to your tortilla and top with desired toppings.
