Trim Healthy Mama E or S- Taco Crack Slaw

Here is a great, simple, easy dish to throw together last minute. This is also a perfect dinner for a hot day! This Tex-mex inspired flavorful slaw is delicious. It family friendly and can easily be adapted to you and your family’s tastes. It is a complete meal as written, but add to it as needed. Some avocado would be great for a THM xoer!!

  • 1 L Ground Meat- Lean if wanting an E
  • 1-2 Pckgs Mushrooms, diced small Optional, gives a hidden veggie
  • 1-2 Cans Black Beans, rinsed 1 Can if wanting an S
  • 14 oz Can of Rotel
  • 16 oz Package of Coleslaw Mix
  • 3ish T Taco Seasoning You can use homemade or store-bought. I make my own

Toppings- Depending on if you want E or S Non-fat Greek Yogurt or sour cream, cilantro, jalapenos, salsa


  • Brown Ground Meat and mushrooms in a skillet. Add the seasonings, rotel, and black beans. Mix well. Add slaw mix and cook until to desired texture. Serve with desired toppings.
