Twice Baked Low Carb Cauliflower

This recipe is fancy enough for the holidays or a special occasion.

It’s also simple enough for a week night dinner. It’s cheesy and delicious. You don’t have to follow the trim healthy mama or low carb way of eating to enjoy this yummy dish. It is such a hit with everyone who eats it. This recipe is full of creamy, cheesy goodness. It’s topped with crispy bacon. The recipe is so easy since we start with frozen cauliflower florets.

Since this recipe comes together quickly, you can make this recipe on a busy weeknight.

Cook a whole chicken in your crockpot or instant pot, add a side salad and this is a no fuss but delicious meal. Use your microwave to cook the cauliflower and make the sauce on the stovetop. It takes less than 15 minutes of hands on effort and then it bakes in the oven. So fast and easy but the results are delicious. You get the flavors of a loaded baked potato without the carbs. You can make this ahead of time as well. Prep this during weekend meal prep or early in the day. Dinner will be a snap to get on the table.

Twice Baked Low Carb Cauliflower

Ingredients

  • 24 oz Frozen Cauliflower Florets
  • 2 T Butter
  • 2 t Garlic
  • 4 oz Cream Cheese
  • 1/4 C Heavy Cream
  • 1/2 C Water or Broth
  • Dash Cayenne (use as much as your family likes)
  • 1/4 t Ground Mustard (or yellow mustard)
  • 1 1/2 C Shredded Sharp Cheddar
  • 5 Pcs Bacon, cooked crispy
  • 3 Green Onions, sliced
  • 1/4 t Black Pepper
  • 1/4 t Salt

Instructions

  • Cook cauliflower in microwave.
  • While the cauliflower is cooking, put butter in a saucepan and melt. Add garlic. Cook for about 2 minutes over medium heat.
  • Add cream cheese to the pan. Stir to melt. Add cream and water, mix well.
  • When everything is mixed well, add seasonings and cheddar cheese.
  • Break up the cauliflower into small pieces. I used my hands. Add cauliflower to a baking dish. Top with cheese sauce. Sprinkle onions and bacon on top. Bake at 350 degrees for 20 minutes.

    Delicious!!!! My 6 year old is super picky. She thought it was Mac & cheese with bacon & ate every bite!
