Heat up your large skillet over medium heat.
Cut up your sausage and add to skillet. If needed, add 1 tablespoon of olive oil.
While the sausage is cooking, cut up your onions and your cabbage. When sausage is cooked, remove from skillet and add onions.
After onions have cooked for a few minutes, add minced garlic and olive oil. After those have cooked for a few minutes, add the cabbage. Stir and cook for a few minutes. If all of your cabbage won't fit into your skillet at one time, add it in stages as you need to. Cabbage cooks down, so you should eventually have enough.
As your cabbage cooks down, you might need to add water, or more oil so it won't burn. If you have a lid that will fit your skillet, place your lid on top. Cook for about 10 minutes, or until the cabbage is cooked to your likeness.
When your cabbage is cooked, add your sausage to the skillet, stir and heat through. Add your salt and pepper to taste.
Scoop into bowls and serve hot.
