In a large skillet over medium heat brown the Italian sausage.
Add the onion and cook for a few minutes. Add the garlic and cook for two more minutes.
Add your seasonings and stir. Add your kale to the skillet and cook until tender.
When the kale is tender, add the pumpkin. Stir until combined.
Your sauce will be thick.
Slowly stir in your unsweetened nut milk and finally heavy cream until it reaches desired consistency.
Serve over desired pasta alternative.
