Low Carb Pumpkin Kale Pasta Sauce

This recipe might sound strange but it was absolutely delicious. I didn’t tell anyone what was in the sauce because I knew they most likely wouldn’t eat it. Honestly, I was worried this pasta sauce wouldn’t work. Since starting this blog I have had a few recipes that were flops. I was prepared that this recipe would end up like those, but it didn’t!! It was so yummy and my whole family loved it. I still haven’t told them what was in it. Put this trim healthy mama s dinner on your menu plan this week. I think you will be surprised by how good this is.

If you don’t want to use kale, or want something a bit milder, use spinach. My first thought was to use spinach but I had a big bag of kale in the fridge, so that is what I used. If you use kale, remove any thick stem piece. I only had small amount I had to remove.

I used dreamfields pasta for the hubby and I. For the kids I used farfalle pasta. Spaghetti squash would be great as well. Use whatever pasta alternative you like to eat. I think zoodles would be a great idea as well. You also don’t have to use the heavy cream and it would be dairy free. However you serve this, make it this week. I plan on this being on my menu every month.

Low Carb Pumpkin Kale Pasta Sauce

Ingredients

  • 1 Lb Italian Sausage I bought the package of sausage without any casings
  • 1 med Onion, diced
  • 1 T Minced Garlic
  • 15 oz Canned Pumpkin
  • 3-4 C Chopped kale
  • 1/2 t Salt
  • 1/4 t Pepper
  • Few Shakes of Red Pepper flakes
  • 1 C Unsweetened Nut Milk
  • 1/4 C Heavy Cream
  • Pasta alternative
  • Parmesan Cheese for topping

Instructions

  • In a large skillet over medium heat brown the Italian sausage.
  • Add the onion and cook for a few minutes. Add the garlic and cook for two more minutes.
  • Add your seasonings and stir. Add your kale to the skillet and cook until tender.
  • When the kale is tender, add the pumpkin. Stir until combined.
  • Your sauce will be thick.
  • Slowly stir in your unsweetened nut milk and finally heavy cream until it reaches desired consistency.
  • Serve over desired pasta alternative.
