Pressure Cooker Pork Loin

Equipment

  • Pressure Cooker or Crockpot

Ingredients

  • 2 Lb Pork Loin Roast
  • 2 t Salt
  • 1 t Pepper
  • 1 t Smoked Paprika
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1/2 t Ground Mustard
  • 2 T Olive oil, divided
  • 2 T Minced Garlic
  • 2 t Italian Seasoning
  • 2 T Balsamic Vinegar
  • 1 C Broth

Instructions

  • Mix together salt, pepper, paprika, onion powder, garlic powder, and ground mustard.
  • Rub spice mixture all over the pork roast.
  • In your pressure cooker put it on sauté. Add the olive oil to the pot and brown the roast on all sides. Turn off the the pressure cooker.
  • In a small bowl mix together the remaining ingredients.
  • Carefully pour on top of the roast.
  • Place lid on top and lock into place. Set the valve to closed. Turn it on and set to manual high for 22 minutes. When done, do a quick release. Carefully remove the lid.
  • Remove the roast and allow to rest for 5-10 minutes before carefully slicing.
  • Serve with yummy sides.
