In a skillet (I just used my foodi) add your oil. When hot, add your onion.
After a few minutes add your mushrooms.
Once mushrooms have cooked a few minutes, add your garlic.
Stir and add your prepared beef.
Brown for a few minutes, if desired.
Mix together the broth and seasonings.
Pour over the meat mixture. Cover and set on high for 2-3 hours or low 3-5 hours.
Add 1/2 cup of sour cream cream to pot. Stir. If desired to thicken, follow the steps mentioned above to slowly add you preferred thickener. I used xanthan gum.
Here is what it looked like after I thickened it with less than 1/4 tsp of xanthan gum.
Serve however you would like. We ate ours over my mashed veggie mix.
