Super Easy and Family Friendly Trim Healthy Mama S Crockpot Beef Stroganoff

This recipe is sort of an accident. I have been making a series called fill your freezer Fridays. I have been trying out new recipes and tweaking old ones. We were going to have crockpot beef tips with mushrooms. As the meal was cooking, it really seemed to fit more along the lines of a beef stroganoff. The end result was perfect! It was a huge fit with my family.

This easy trim healthy mama beef stroganoff recipe uses no canned soups!

Like I said, this recipe was an accident. I have been wanting to make an on plan beef stroganoff but I wasn’t sure how to get the flavor without canned soup. Surprisingly, this tasted perfect without it! I do brown the onion and the mushrooms, but that isn’t necessary. It does add a little extra flavor and makes sure they are both soft by the time the meat is cooked.

If you want to thicken the sauce, I used xanthan gum.

I prefer to use xanthan gum for thickening the sauce. The sauce was a little thin, but definitely edible. I wanted it a little thicker, so I slowly added some xanthan gum. Go slowly! I barely used a 1/4 of a tsp total. I sprinkled a little on and whisked. After about a minute I did that again, and it was perfect. I ended up serving the beef stroganoff over my mashed veggie mixture.

If you make the mashed veggies, make sure you follow these tips.

I use one yellow squash, a bag of frozen cauliflower, and 2-3 baby potatoes per person. If you are serving more than 3-4 adults, you might need to double the recipe. I peel the squash now. Also, when you drain the veggies, drain them well. I think the squash adds a decent amount of liquid. If you don’t drain it well, the mashed veggies end up a little too “loose”. By using the potatoes and not peeling them, my family eats them just fine now. At first I had pushback. But peeling the squash and not peeling the potatoes, it seems to work for them.

But you can serve the beef stroganoff however you want. This seemed to work really well for us!

Please excuse the bad pictures. Hubby and I were in a bad accident and now are seeing a Dr 3 days a week. I made this quickly before rushing out the door. to our appointment. And then I finished it when we got back.

Trim Healthy Mama S Beef Stroganoff

Ingredients

  • 1 1/2 Lb Diced Sirloin or Stew Meat
  • 1 M-L Onion, diced
  • 8 oz Sliced Baby Bella Mushrooms
  • 1-2 T Garlic
  • 2 t Oil
  • 1/2 C Beef Broth
  • 1-2 T Worcestershire Sauce I started with one and added more with the final taste
  • 1 t Onion Powder
  • 1 t Garlic Powder
  • 1 t Parsley
  • 1/2 C Sour Cream

Instructions

  • In a skillet (I just used my foodi) add your oil. When hot, add your onion.
  • After a few minutes add your mushrooms.
  • Once mushrooms have cooked a few minutes, add your garlic.
  • Stir and add your prepared beef.
  • Brown for a few minutes, if desired.
  • Mix together the broth and seasonings.
  • Pour over the meat mixture. Cover and set on high for 2-3 hours or low 3-5 hours.
  • Add 1/2 cup of sour cream cream to pot. Stir. If desired to thicken, follow the steps mentioned above to slowly add you preferred thickener. I used xanthan gum.
  • Here is what it looked like after I thickened it with less than 1/4 tsp of xanthan gum.
  • Serve however you would like. We ate ours over my mashed veggie mix.
