Crockpot Asian Pineapple Pork- THM E

This recipe is so simple to make. This is part of my dump and go freezer to crockpot recipes! I just dumped all of the ingredients in a freezer bag. When ready to cook, thaw, and dump into a crockpot. I didn’t sear the meat to make it easier and it turned out great! Feel free to sear the meat and use fresh veggies. This is such a simple recipe to make.

To keep this a trim healthy mama E, you need to use lean pork. To save money I bought a pork loin and cut it into 4 pieces. We ended up with a thm xoer.

If you hate pineapple you can leave it out BUT

my daughter doesn’t like pineapple and love the dish. She just didn’t add any pineapple to her plate. My family loved this meal so much, there weren’t any leftovers. All of the cauliflower fried rice was eaten as well. If your family is leery of cauliflower rice, make sure you do my tip: cook and cook with liquid until the rice no longer tastes like cauliflower.

If you want to use brown rice, here is a great brown rice, fried rice.

To make this recipe super easy, I used frozen onions and frozen sliced bell peppers. And I used squeezable ginger that you find in the produce section. Feel free to use fresh veggies and even fresh pineapple if you want. Make it as easy as you want. You can also cook this in your pressure cooker if you desire. Depending on the size of your pork (I used 2 lb) I would do 40 minutes (or check online for recommendations).

Ingredients

  • 2 lb Pork Tenderloin I used a pork loin to save money, so ours was a thm xoer
  • 20 oz Can of Pineapple Chunks You could use crushed or tidbits if desired
  • 1/4 C Bragg's or Soy Sauce
  • 1/4 C Brown Swerve
  • 2 T Minced Garlic
  • 2 T Ginger, I used the kind in a squeezable container
  • 1 M Onion, I used frozen
  • 2 M Bell Peppers, I used frozen

Instructions

  • I dumped everything but the pork loin in the freezer bag, squished everything around and then added the pork. Freeze or marinate for a few hours. Dump thawed ingredients in your crockpot and cook on low 6-8 hours or high 3-5 hours.
  • Side note- if you want your peppers firmer, I would add them a bit later. I like mine cooked, cooked, cooked, so mine went into the freezer bag.
  • Serve as desired.
