This creamy Crockpot White Chicken Chili is full of tender chicken, white beans, green chiles, and plenty of warm, cozy flavor. It’s the kind of dinner I love for a busy day because most of the work happens in the slow cooker, but it still tastes like you put a lot more effort into it.

I char the poblano before adding it to the chili, and I really think that little extra step is worth it. It gives the chili a deeper, slightly smoky flavor without making it overly spicy.

Instead of using a heavy cream cheese base, this version gets its creaminess from mashed white beans, light soft cheese wedges, and a little half-and-half. Fresh lime juice and cilantro are stirred in at the end to brighten everything up.

It’s creamy and comforting without feeling quite as heavy as some white chicken chili recipes.

Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 1 M onion diced
  • 1 poblano pepper
  • 1-2 T garlic minced
  • 2 Cans diced green chiles 4 ounces each
  • 2 Cans Great Northern or cannellini beans 15 ounces each, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt or to taste
  • 1/2 teaspoon black pepper
  • Pinch of cayenne optional
  • 6-8 wedges Light Laughing Cow cheese
  • 1/4-1/2 cup half-and-half
  • Juice of 1 lime
  • 1/4-1/2 C chopped fresh cilantro

Instructions

  • Char the poblano directly over a gas flame, under the broiler, in an air fryer, or in a dry skillet until the skin is blistered and blackened in spots. Place it in a bowl and cover for about 5–10 minutes. Rub or peel away most of the loose charred skin, remove the stem and seeds, and dice the pepper
  • Add the chicken breasts to the bottom of the slow cooker. Add the diced onion, charred poblano, garlic, green chiles, beans, chicken broth, cumin, chili powder, smoked paprika, oregano, garlic powder, onion powder, salt, black pepper, and cayenne if using. Cover and cook on **LOW for 6–7 hours** or **HIGH for 3–4 hours**, until the chicken is tender and easily shreds.
  • Remove the chicken and dice them or shred it with two forks.
  • Before returning the chicken to the crockpot, scoop out about **3/4 to 1 cup of the beans along with a little of the broth**. Mash them well with a fork or blend briefly until mostly smooth. This is optional
  • Stir the mashed beans back into the chili. This gives it a thicker, creamier texture without needing a lot of added fat. Add the **Light Laughing Cow wedges** and stir. It will take a little for them to melt. I mashed the bits on the side of the crockpot to kind of help them melt into the chili.
  • Return the shredded chicken to the slow cooker. Pour in the **1/4-1/2 cup half-and-half** and stir well. Cover and cook another **10–15 minutes on LOW**, just until everything is hot and creamy.
  • Stir in the lime juice and fresh cilantro right before serving. Taste and adjust salt, pepper, or lime as needed.
