I made this for our youth, and they didn’t know it was actually cauliflower rice! If you have been missing the holiday classic, I have the easiest broccoli and rice casserole recipe for you. My game changing hack for cooking cauliflower rice is what makes this possible.

I don’t have as many pictures because I made this for our youth. But it was a hit. I have a friend who has told me that she has never had cauliflower rice that she likes. I finally won her over with this recipe. My hack/trick is that I keep adding liquid (broth or water) until the cauliflower rice is very soft and lost all cauliflower flavor. That’s it. But it really is game changing! My boys actually eat it and can’t tell.

I might add some mushrooms next time I make this. I am used to cream of mushroom added to our holiday dish. If you are used to other flavors in your cheesy broccoli and rice casserole, add it. This is a basic recipe that you can dress up if desired. You can even add cooked shredded chicken to it and make it a complete meal. It’s super easy and uses basic ingredients. Cheesy Broccoli and Rice Casserole- Low Carb/THM S
Ingredients
- 1 M Onion, diced
- 1 T Minced Garlic
- 1-2 T Olive Oil
- 1 t Salt
- 1/2 t Pepper
- 2 Pckgs Frozen Cauliflower Rice
- 1 Pckg Frozen Broccoli
- 2 T Heavy Cream
- 2 Cups Shredded Cheese, divided
- Broth or Water
Instructions
- In a large skillet over medium heat, add your olive oil and diced onion. Cook for a few minutes, add salt, pepper, and garlic. Cook for a minute. While you are cooking this, microwave your cauliflower rice.
- Add your cauliflower rice to the onion mixture.
- Cook the rice and keep adding about 1/4-1/2 cup of liquid. Keep cooking and adding until your rice is soft and no longer tastes like cauliflower. Microwave your broccoli. Add it to the skillet. Break apart the florets so they are smaller.
- Once the broccoli is mixed in stir in heavy cream and 1 1/2 cups of shredded cheese.
- Place rice mixture into a sprayed 9x13 dish.
- Top with remaining cheese. Since this is already hot, we will only cook for about 10-15 minutes. Bake at 350 degrees until cheese is melted.
- Serve hot with desired sides.
