Cilantro Lime Chicken

I recently did a mini freezer cooking day. This was one of the meals I prepped. I LOVE being having a prepped kitchen. This honestly helps me stay on plan more than anything. If I could only offer one tip to ladies following the trim healthy mama way of eating, this would be it. I don’t always have time to make a dinner from scratch. This is still a homemade dinner, but I took a little time to throw a few ingredients in a freezer bag to use on a busy day.

This recipe is so versatile. If you follow the trim healthy mama eating plan this meal was an s because I used chicken thighs. You can make it with chicken breasts and keep the fat to minimum and make this a fuel pull. I will be honest, this was absolutely delicious with chicken thighs. The whole family loved this and we had no leftovers! You can bake these, cook them in your crockpot, or grill them. They were amazing grilled!

If you aren’t going to freeze these, you will want to put everything either in a bag or a bowl to marinate at least an hour before cooking. I also grilled my zucchini when I grilled the chicken. Here is how I usually grill my zucchini. Grilled Zucchini

Cilantro Lime Chicken

Ingredients

  • 2 Lb Chicken thighs
  • 3 T Olive Oil
  • 1/3 C Lime juice
  • 3/4 C Chopped Cilantro
  • 1 T Minced Garlic
  • 1 t Salt
  • 1/2 t Black Pepper
  • 1 t Ground Cumin

Instructions

  • Put everything into a freezer baggie, except chicken and squish around. Add chicken and squish around again and freeze.
  • Thaw and cook your desired way.

    Are those potatoes on your plate?!

      Yes they are. I buy the bag from Aldi and air fry them and will usually put a small amount on my plate. The smaller, colored potatoes are better for us than the big white potatoes. They are both allowed on occasion.
