Buffalo Chicken Chili, Trim Healthy Mama S or FP
Here is a fun new chili/soup to add to your rotation! This was a huge hit with my family. I wish I would have made this recipe to go with my fill your freezer Friday’s. It was that good. We have finally entered into soup season here in Texas (well, that comes and goes here as we get cold and then we can be in the 90’s two days later). This isn’t spicey either. But you can definitely make it spicey if you want to.
This is a crockpot recipe, but you can just cook it on the stove-top if you want/need to.
This recipe would also be great cooked in a pressure cooker as well. This buffalo chicken chili has the flavors of the favorite finger food, chicken wings, but in a chili instead! You can spice it up or keep it mild. My hubby made his bowl really spicey. The hardest part of the recipe was chopping the veggies, that’s it. This recipe is so simple.

If you want to pull back on the fat for this recipe, don’t add any cheese to your bow, and only use 1/2 a block of reduced fat cream cheese. This chili is very flavorful and you don’t really need to add much to it. But, you can add lots if you want to. I didn’t have any but I had planned on adding blue cheese crumbles to the top of mine. You can jalapenos, ranch, cheddar cheese, cilantro, green onions, even bacon! This simple twist on a classic finger food is sure to be a hit!
Buffalo Chicken Chili
Ingredients
- 1 1/2 Lb Boneless, Skinless Chicken Breasts Can use thighs for an s
- 1 M Onion, Diced
- 1/2 C Carrots, chopped
- 1/2 C Celery, chopped
- 1 T Minced Garlic
- 1 T Dried Parsley
- 1 T Dried Chives
- 2 t Dried Dill
- 2 t Garlic Powder
- 1 t Onion Powder You can sub the above ingredients for a ranch packet if you want
- 1 t Smoked Paprika
- 1 t Salt
- 1/2 t Pepper
- 4-6 C Chicken Broth, it depends on how thick you want the chili
- 14 oz Can Fire Roasted Tomatoes
- 15 oz Can White Beans, Rinsed
- 1/2 C Frank's Wings Sauce You can add more or less. If your family is sensitive, make sure you use mild.
- 3/4 C Verde Salsa
- 1/2-1 Pckg Reduced Fat Cream Cheese

Instructions
- This part is optional, I wanted my veggies cooked a bit before adding the remaining ingredients. In a pot, add about 2 teaspoons of olive oil and cook your onion, carrots, and celery on medium heat until softened.
- Once softened, add your seasonings. Remember, you can sub a ranch packet it you want/need to.
- Place everything in your crockpot and cook on low for 4-6 hours, or high2-3 hours.
- Carefully remove your chicken and cut or shred.
- Place back into the pot.
- Stir and taste to make sure it is seasoned to your tastes.
- Serve with desired toppings.
