Easy and delicious Trim Healthy Mama Crockpot Shredded Mexican Chicken, Fuel Pull

This recipe is super easy! It is based off of Tinga Chicken, a Mexican recipe. The shredded chicken is so versatile and can be used so many ways. The first night we had tostadas. I bake or air fry the 25 calorie Mission brand tortillas for the base of our tostadas. You can buy baked tostada shells if you don’t want to bake your own.

If you want to bake or air fry your corn tortillas, here’s how I do it

I am pretty lazy when it comes to the kitchen, I need easy. Last night I just laid the corn tortillas directly on the baking rack and closed the oven door. I turned the oven to 350 degrees and they were finished before the oven was preheated. When I air fry them, I typically cook them at 375 for about 7 minutes. These corn tortillas are pretty small and thin, so you might need to cook them longer.

The Mexican chicken isn’t too spicey as written.

I try to make our meals mild to medium when it comes to heat. Of course, you can make this hotter if you want. Tinga chicken is a Mexican dish typically made with shredded chicken and sauce onions, adobo sauce, and spices. This is my simple take on the recipe. Add more seasonings if you want too. I like to start with the basics and add more at the end. I have learned the hard way not to add too many in the beginning.

I didn’t want my Tinga Chicken too saucy so I could use it lots of ways.

You can make your tinga chicken more saucy than I did, but I want to make it into tostadas, flautas, nachos, and more. When the meat is too saucy it will cause all those to get soggy. This recipe is just a starting point. There are lots of ways to use it and dress it up.

Equipment

  • Crockpot

Ingredients

  • 1 1/2-2 Lb Chicken Breasts
  • 1 M-L Onion, cut into fourths
  • 1 Jalapeno, cut in half with the seeds removed Optional
  • 3 Cloves of Garlic, or 1 tablespoon minced garlic
  • 1 t Salt
  • 1/2 t Pepper
  • 1 t Ground Cumin
  • 1 t Garlic Powder
  • 1 t Onion Powder
  • 1 t Smoked Paprika
  • Chipotle Peppers in adobe sauce Use 1 pepper to the whole can

Instructions

  • In your crockpot place the chicken breasts. Season the chicken with all of the seasonings (reserve the chipotle peppers for later). Add in your onion, garlic, and jalapeno. Pour 1 cup of water or broth on top.
  • Cook on low 5-6 hours or high 3-4.
  • Remove the chicken from the crockpot. Keep the liquid in the crockpot.
  • Add in your peppers and some of the sauce. I ended up using 3 peppers and some of the sauce. I also added some of the sauce the refried beans we put on the tostadas.
  • I used my immersion stick blender in the crockpot and blended until smooth. You can pour everything into a blender if you want.
  • Shred the chicken and mix with the sauce.
  • Serve it however you want.
