Easy Air Fryer Blueberry Hand Pie

This Air Fryer Blueberry Hand Pie is made with half of a large low-carb tortilla, thick blueberry compote, and an optional vanilla protein glaze. It is a quick way to enjoy a warm, fruit-filled dessert without making pie dough or heating the oven.

I used the blueberry compote from my Blueberry Pie Overnight Oats, but you can fill these easy tortilla hand pies with almost any thick sweet or savory filling.

For the blueberry hand pies

  • 1 large low-carb tortilla
  • 2 to 3 tablespoons thick blueberry compote per hand pie
  • Water, for lightly moistening the tortilla
  • Nonstick cooking spray

What Blueberry Filling Should I Use?

I used the homemade blueberry compote from my Blueberry Pie Overnight Oats recipe.

1. Cut the tortilla

Cut one large low-carb tortilla evenly in half. Each half makes one hand pie.

2. Lightly moisten it

Lightly wet the tortilla with a small amount of water.

You only want to make it flexible enough to shape and seal. Do not soak it or give it a bath.

3. Shape the tortilla

Bring the cut edges together to form a cone. Slightly overlap and press the edges together, leaving the top open.

4. Add the filling

Spoon 2 to 3 tablespoons of cooled blueberry compote into the opening.

Do not overfill it, and keep the compote away from the edges.

5. Seal the hand pie

Press the open edges together and crimp them firmly with the tines of a fork.

6. Air fry

Lightly spray both sides with nonstick cooking spray.

Air fry at 375°F for 10 to 15 minutes, turning at least once, until the tortilla is golden and firm around the edges.

Air fryers vary, so begin checking it around the 10-minute mark.

7. Cool and glaze

Let the hand pie cool for several minutes before eating. The blueberry filling will be very hot.

Finish it with powdered sweetener, vanilla glaze, or a vanilla protein glaze.

Mix the powdered sweetener with a splash of milk or heavy cream and a little vanilla.

  • 1/2 Lrg Low Carb Tortilla
  • Filling of choice
  • Water
  • Non-stick spray

Instructions

  • Cut tortilla in half
  • Run a little water over it. You aren't giving it a bath, just a little to make it damp.
  • Fold into a cone.
  • Seal the edges but leave the top open.
  • Fill with filing. And crimp the top closed.
  • Spray with non-stick spray and air fry at 375 for 10-15 minutes, flipping at least once.
  • Make desired topping. I used a little vanilla protein powder with milk.
  • Make sure it isn't too hot before you eat it.
