Ingredients
For the high-protein oat base
-
1 cup old-fashioned oats
-
1 cup nonfat Greek yogurt
-
1 1/2 cups milk of choice (a mix of high-protein milk and unsweetened almond milk works great)
-
3 tablespoons chia seeds
-
1 teaspoon vanilla
-
3 scoops protein powder (vanilla, cinnamon, or blueberry all work well)
Mix-ins
-
1 cup frozen wild blueberries
-
Sweetener to taste, optional (use your favorite low-glycemic sweetener)
For the blueberry compote
-
2 cups frozen wild blueberries
-
About 1/4 cup sweetener of choice (a blend like Lakanto with allulose works well)
For layering
-
1 cup granola (a lower-sugar option like Purely Elizabeth Original works well)
How to Make Blueberry Pie Overnight Oats
Step 1: Blend the oat base
-
In a blender, combine the oats, Greek yogurt, milk, chia seeds, and vanilla.
-
Blend until smooth and creamy.
Step 2: Add protein and blueberries
-
Add the protein powder and blend briefly, just until incorporated. Avoid over-blending so the mixture stays thick.
-
Pour the oat mixture into a bowl and fold in 1 cup frozen wild blueberries.
-
Taste and adjust sweetness if needed with your preferred sweetener.
Step 3: Make the blueberry compote
-
In a skillet over medium heat, add 2 cups frozen wild blueberries and your sweetener.
-
Cook, stirring occasionally, until the mixture thickens and becomes jam-like.
-
Remove from heat and let the compote cool slightly before layering.
