I know what it’s like to have lots of hungry mouths to feed, feel absolutely exhausted at the end of the day. These pork chops will save your dinner. They are seriously so easy to make! I didn’t have any leftovers either. If you want to change up your regular pork chop flavor, or use chicken breasts if you want, try this recipe. You won’t be disappointed!

This recipe uses only a few basic ingredients.

To keep this pork chop recipe low carb, thm s, I didn’t use the typical coating ingredients. I did use only 1 teaspoon of Cajun seasoning and it wasn’t spicy at all. If your family likes heat, I would double it or even use 1 tablespoon. I have to keep things mild for 1 person. I have at least one kid that things mild is too hot. But those of us who like heat can always ad more heat to our plates.

For those in my family who eat like me, we had mashed cauliflower and roasted broccoli.

I made mashed potatoes for everyone else. Another option is to make a pan of roasted veggies. Use whatever you have. A few ideas are broccoli, cauliflower, Brussels sprouts, asparagus, squash, radishes, and more. You can add some potatoes in for your kids if you want. Here is how I make my roasted veggies. Roasted Veggies I would add parmesan cheese to the vegetables when you roast them and add a little Cajun seasoning as well. Yum!
