Crockpot Green Chili Chicken, Low Carb

This low carb, trim healthy mama s crockpot dinner, is amazing.

Green chili chicken is perfect for any family that isn’t dairy free. You can make this for any dinner, potluck, get-together, etc. It will be an absolute hit. My entire family ate this so fast, there were no leftovers. This isn’t the prettiest dinner, but you are talking the girl who had a website call ugly cookie. I am all about taste and then appearance. The taste is great!

I mentioned easy, so how easy is it? My teenage son dumped everything in the crockpot on Monday for me.

Hubby and I got up at 3 and we needed something that was super easy. I prepped this as part of my new meal prep method. Everything was in the tote and worked out perfect that crazy day. I am trying to work on more and more crockpot meals, not just because I love using my crockpot. I am hoping to have a trim healthy mama menu for October and the annual month long crockpot celebration, Crocktober.

Here are a few ways you can serve this.

If your family isn’t all eating like you, they can have regular Spanish rice and flour tortillas. My whole family will eat my low carb Spanish cauliflower rice. It takes a little extra time to make it like this, but the taste is so great!! I served mine and my hubby’s with the cauliflower rice, jalapenos, and some avocado for me. If you want to make this as a filling, you can fill it with low carb wraps or use lettuce leaves. You won’t regret putting this on your menu.

Crockpot Green Chili Chicken


  • 2 Lb Boneless Skinless Chicken Breasts or Thighs
  • 2 4.5 oz Cans of Green Chilis
  • 1 T Minced Garlic
  • 1 t Salt
  • 1/2 t Pepper
  • 1/2 t Ground Cumin
  • 1 t Chili Powder
  • 8 oz Cream Cheese, can use 1/3 less fat
  • 1 1/2 C Shredded Cheese, cheddar or cheddar Jack


  • Place the chicken in the crockpot. Mix together the green chilies, garlic and seasoning. Pour on top of the chicken. Cook on low 4-6 hours or high 2-3 hours.
  • Place the cream cheese into the crockpot and allow to melt. Shred with two forks. Add the shredded cheese and stir.
  • Serve with your desired sides and toppings.
