Crockpot Korean BBQ Beef Bowls

Korean BBQ Beef Bowls
These Korean BBQ Beef Bowls are made with tender slow cooker shredded beef, a savory-sweet Korean-inspired sauce, crisp vegetables, and a creamy spicy sauce. Serve them over cauliflower rice for a lower-carb bowl or over rice for a family-friendly option.
One of my favorite things about bowl meals is how easy they are to customize.
You can make one base recipe and let everyone build their own bowl with the toppings they love. These Korean BBQ Beef Bowls are full of flavor from tender shredded beef, garlic, ginger, coconut aminos, rice vinegar, sesame oil, and a little gochujang if you like some heat.
This is the kind of meal that feels like takeout, but it is simple enough to make at home. The slow cooker does most of the work, and the toppings can be prepped ahead of time for an easy dinner or meal prep lunch.

- Green onions
- Sesame seeds
- Spicy yogurt sauce
For a family-friendly version, serve the beef over jasmine rice, brown rice, or your favorite rice.
Ingredient Notes
Beef Stew Meat
Beef stew meat works well because it becomes tender after cooking low and slow. You can also use chuck roast cut into chunks if that is what you have.
Coconut Aminos or Bragg’s Liquid Aminos
Coconut aminos give the sauce a slightly sweeter, milder flavor. Bragg’s Liquid Aminos will be saltier, so taste before adding extra salt.
Gochujang
Gochujang adds amazing flavor and a little heat. It is optional, but it gives the beef a deeper Korean-inspired flavor.
If you are following Trim Healthy Mama, check your ingredients and use the option that works best for your plan.
Brown Sweetener
A brown sugar-style sweetener helps give the sauce that savory-sweet BBQ flavor without using regular sugar.
Cauliflower Rice
Cauliflower rice keeps the bowl lighter and lower in carbs. You can use frozen cauliflower rice to make this easy.
Fresh Vegetables
Cabbage, carrots, cucumber, and green onions add crunch and freshness. They balance the rich shredded beef really well.

How to Make Korean BBQ Shredded Beef
Step 1: Add the Beef to the Slow Cooker
Place the beef stew meat, sliced onion, minced garlic, grated ginger, and beef broth into your slow cooker.
Step 2: Make the Sauce
In a small bowl, stir together the coconut aminos or Bragg’s Liquid Aminos, rice vinegar, sesame oil, brown sweetener, gochujang, smoked paprika, garlic powder, and black pepper.
Step 3: Pour the Sauce Over the Beef
Pour the sauce over the beef in the slow cooker.
Stir slightly to coat the meat.
Step 4: Cook Low and Slow
Cover and cook on low for 8 to 9 hours, or until the beef is tender and shreds easily.
Step 5: Shred the Beef
Shred the beef with two forks and return it to the cooking juices.
Let it sit in the sauce for 15 to 20 minutes so it can soak up all that flavor.
How to Build Korean BBQ Beef Bowls
Start with your base:
- Cauliflower rice for a lower-carb bowl
- Jasmine rice or brown rice for a family-friendly option
- A mix of cauliflower rice and regular rice if you want something in between
Then add:
- Korean BBQ shredded beef
- Shredded cabbage
- Matchstick carrots
- Thinly sliced cucumber
- Green onions
- Sesame seeds
- Spicy yogurt sauce
Serve warm and enjoy.
Spicy Yogurt Sauce
This sauce brings the whole bowl together. It is creamy, tangy, and spicy, and it tastes so good with the Korean BBQ beef.
Ingredients
- 1/2 cup nonfat Greek yogurt
- 1 to 2 tablespoons sriracha or gochujang
- Splash of rice vinegar
- Garlic powder, to taste
- Sweetener, if desired
Instructions
Stir everything together in a small bowl.
Taste and adjust the spice level, sweetness, and garlic powder to your preference.
If the sauce is too thick, add a tiny splash of water or unsweetened almond milk to thin it.

Tips for the Best Korean BBQ Beef Bowls
Do not skip the resting time after shredding
After you shred the beef, let it sit in the cooking juices for 15 to 20 minutes. This helps the meat soak up even more flavor.
Prep your toppings ahead of time
Slice the cucumbers, chop the green onions, and prep the cabbage ahead of time. Then all you have to do is warm the beef and build your bowl.
Adjust the heat
Use less gochujang or sriracha for a mild bowl. Add extra if you like more spice.
Taste before adding salt
Coconut aminos and Bragg’s Liquid Aminos have different salt levels. Taste the beef after cooking before adding any extra salt.
Use the leftovers in different ways
The shredded beef is delicious in lettuce wraps, low-carb tortillas, salads, rice bowls, or cauliflower rice bowls.
THM Notes
These Korean BBQ Beef Bowls can be adjusted depending on your Trim Healthy Mama goals.
For a lower-carb THM S-style bowl, serve the beef over cauliflower rice with non-starchy vegetables and keep the toppings low-carb.
If using regular rice, this would move into a different fuel setting because of the added carbs. For family members who are not following THM, rice is an easy option.
Your final fuel setting will depend on the cut of beef, the amount of fat in the meat, the sauce ingredients, and the bowl toppings you choose.

What to Serve with Korean BBQ Beef Bowls
These bowls are a full meal on their own, but you can also serve them with:
- Steamed broccoli
- Roasted green beans
- Extra cucumber slices
- Lettuce cups
- Cauliflower rice
- A simple cabbage slaw
- Rice for family members
- Kimchi, if you enjoy it
Storage and Meal Prep
Store the shredded beef separately from the fresh toppings in airtight containers in the refrigerator.
The beef will keep for up to 4 days.
For meal prep, portion the beef and cauliflower rice into containers, but keep cucumbers, cabbage, green onions, and sauce separate until serving for the best texture.
Can I Freeze Korean BBQ Shredded Beef?
Yes. The shredded beef freezes well.
Freeze it with some of the cooking juices so it stays tender when reheated.
Thaw in the refrigerator overnight, then reheat gently in the microwave, on the stovetop, or in the slow cooker.

Frequently Asked Questions
Can I use a chuck roast instead of stew meat?
Yes. Chuck roast works well for this recipe. Cut it into large chunks before adding it to the slow cooker, or cook it whole and shred it when tender.
Is gochujang necessary?
No, but it adds great flavor. If you do not have it or do not want the heat, you can leave it out.
Can I make this less spicy?
Yes. Use less gochujang in the beef and use less sriracha or gochujang in the yogurt sauce.
Can I use soy sauce instead of coconut aminos?
You can, but soy sauce is much saltier. Use less and taste before adding more.
Can I make this ahead of time?
Yes. The beef is great made ahead and reheated. Store the toppings separately and build the bowls when ready to eat.
Can I serve this over rice?
Yes. Rice is a great option for family members or anyone who wants a more traditional bowl. For a lower-carb option, use cauliflower rice.
