Ingredients

  • 1/2 cup Brown Swerve (or your preferred sugar substitute)
  • 1/2 cup Allulose (or additional preferred sweetener)
  • 1 cup water
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon vanilla extract

For the Pumpkin Spice Cold Foam:

  • 1 tablespoon heavy whipping cream
  • 1 tablespoon milk of choice
  • 1 tablespoon of pumpkin spice syrup

For the Latte:

  • 1-2 shots of espresso (or 1-2 tablespoons of instant coffee dissolved in 6 oz water)
  • 2-4 tablespoons pumpkin spice syrup
  • 6-8 ounces of milk of choice (dairy or non-dairy)
  • Ice (optional)

Instructions

Step 1: Make the Pumpkin Spice Syrup

  1. In a medium saucepan, combine the pumpkin puree, Brown Swerve, Allulose, and water.
  2. Add the ground ginger, cloves, cardamom, nutmeg, and stir until well combined.
  3. Bring the mixture to a simmer and let it simmer for about 10 minutes, allowing the spices to release their flavors.

Ingredients

  • 1/4 C Pumpkin Puree
  • 1/2 C Brown Swerve

Iced Coffee Ingredients

  • 2 t Instant Coffee, I love Nespresso Or 2 shots Espresso
  • 6 oz Water, exclude if using espresso only add if using instant coffee
  • Ice
  • 6-8 oz Milk of Choice

Pumpkin Spice Cold Foam

  • 1 T Heavy Whipping Cream
  • 1 T Milk of Choice
  • 1 T Pumpkin Spice Syrup

Instructions

  • Add all of the ingredients for the pumpkin pie spice (except the vanilla) into a small to medium saucepan. Bring to a simmer and simmer for 10 minutes.
  • Once your mixture has simmered, allow to cool.
  • Pour into a storage container(s).
  • To make an ice latte, put your instant coffee and water (or your espresso) into a glass. Add 2-4 tablespoons of the pumpkin spice syrup. Froth a little bit.
  • Add ice. I don't have fancy ice, just ice from my freezer. I used about 1 1/2 cups. Use 6-8 ounces of milk of choice.
  • If you froth the mixture, after adding the milk, you will have a little foam on top.
  • Stop here if desired. If not, let's make a pumpkin spice cold foam. In a small glass add 1 tablespoon of heavy cream, 1 tablespoon of milk, and 1 tablespoon of the pumpkin spice syrup. Froth.
  • Pour on top of the latte.
  • Sprinkle with pumpkin pie spice if desired.
  • Serve
