Sheet Pan Chicken Fajitas
My site might be filled with an equal amount of Mexican inspired meals as all the other meals on here. I think this type of food has been my favorite pretty much my whole life. I am always looking for new ways to make some of our favorites. Since I love sheet pan dinners, this seemed like a perfect meal.
You can make this into a trim healthy mama fp if you limit the amount of fat you add. serve with some Spanish brown rice and some fat free refried beans for a nice trim healthy mama e meal. If you are making this an e meal, make sure you use toppings like salsa, nonfat Greek yogurt, cilantro, jalapenos.
Top with your favorite Mexican toppings: cilantro, sour cream or non-fat Greek yogurt, shredded cheese, avocado or guacamole, salsa, jalapenos, pico, whatever you like. These are great for an s meal, shredded cheese, sour cream, avocado, guacamole! Yum.

Sheet Pan Fajitas
Ingredients
- 1 1/2 Lb Chicken Breasts cut into strips
- 1 Lrg Onion, cut into strips
- 2 Lrg Bell Peppers, cut into strips
- 1-3 T Olive Oil
- 1 Fresh Lime for Juice
- Taco Seasoning, homemade or packaged
Instructions
- Preheat oven to 400. If desired, line your sheet pan with parchment paper or aluminum foil.
- Prep your meat and veggies.
- Make your taco seasoning.
- Drizzle your chicken with the desired amount of olive oil and toss.
- Sprinkle the taco seasoning on top and toss.
- Bake for 15 minutes
- Take out of the oven and stir everything. Put back in the oven until finished, about 10 more minutes.
- Take out of the oven and stir.
- Serve in low carb tortillas, corn tortillas, lettuce leaves, etc.
