Indian Spiced Cauliflower Rice

I have been needing to find a way to make an Indian spiced cauliflower rice. We really like Indian spices and I try to make things like butter chicken or Indian spiced chicken for my family. They really, really like those flavors. My guys don’t care for cauliflower rice. I have learned that I have to keep cooking the rice until it is soft. I also try to infuse as much flavor into the rice as well.
You can see by the color that the cauliflower rice has been flavored with vibrant seasonings.
You can follow the instructions for whatever type of meal you are making, I have a really delicious fried cauliflower rice that is great with Asian food. If you are wanting a substitute for Spanish rice, use taco style seasonings and add in a can of rotel. You do have to be a little patient with this recipe. A lot of my recipes are pretty fast or don’t need a lot of attention. This one isn’t hard but you want to cook the cauliflower long enough. That is the biggest tip for getting your rice to taste better.
Making sure you season enough is also important.
I think that adding a sautéed onion and minced garlic is also a great way to not only get extra nutrition but add a lot of flavor. Another tip is to add some of your seasonings to your skillet when your onion and garlic are finished. When you heat them through it really brings out the flavor of the spices. Don’t go to heavy at first. You might not need as much as you think. You can’t get rid of the seasoning you add but you can always add more.
Low Carb Indian Spiced Cauliflower Rice
Ingredients
- 10 oz Frozen Riced Cauliflower, heated through in the microwave
- 1 Sm-Md Onion, diced
- 1 T Minced Garlic
- 1-2 T Olive Oil
- 1/2 t Turmeric
- 1/2 t Ground Cumin
- 1/2 t Gram Marsala
- 1/2 t Curry Powder
- 1/2 t Salt
- Few Shakes Cayenne Pepper
- Enough water or broth to cook the rice until it's soft
Instructions
- Add the olive oil and onion to a medium skillet over medium heat. Cook for a few minutes. Add the garlic and cook another minute.
- Add the spices and cook for a minute or two.
- Add the cauliflower rice and stir to combine. Add water or broth to the skillet and cook until the rice is soft. You can increase the heat but don't go very far so you can keep an eye on it so it doesn't burn. Taste and add more seasonings is desired.
- If this is a side dish, add some chopped cilantro on top and serve hot.
