I love queso! Good queso is hard for me to resist. Most often though, it has off plan ingredients. This queso uses simple ingredients found at your local grocery store and creates a dip that will give any restaurant queso a run for their money. It is so creamy and smooth!
You can top with pico de gallo, guacamole, or nothing.
One of my favorite quesos ever is topped with pico. I think guacamole would also be a nice topper. But honestly, this queso can stand on its own. If you like things spicey, add more jalapenos. As is, it isn’t spicy. I try to make our foods/meals so that everyone can enjoy it. This way we can make it as hot as we want.
This is perfect for Cinco de Mayo, Taco Tuesday, the Superbowl, or just because.

Addicting Queso- Low Carb, THM S
Ingredients
- 2 T Butter
- 1 Med Onion, finely chopped
- 1 Med Jalapeno, deseeded, deveined, and finely chopped
- 1 T Minced garlic
- 2 t Ground Cumin
- 2 t Chili Powder
- 1 t Smoked Paprika
- 1 t Salt
- 1 t Onion Powder
- 1 t Garlic Powder
- 1 1/2 C Heavy Cream
- 8 oz Cream Cheese
- 8 oz Colby Jack Cheese, shredded
- Enough Unsweetened Almond Milk to thin it to the consistency you like
- Pico de Gallo, Guacamole, or any desired topping
Instructions
- Finely chop your onion and jalapeno.
- In a large skillet place your butter and melt over medium heat.
- Add onion and jalapeno to the skillet. Allow to cook until soft.
- Add the garlic and the seasonings. Allow to cook for a couple minutes.
- Once soft, add heavy cream.
- Bring to a simmer and add cubes of cream cheese.
- Whisk until melted.
- Add the shredded cheese.
- Whisk until melted.
- Once the cheese is incorporated, slowly add in some unsweetened almond milk until it is the consistency you want.
- Mine magically changes color because I tasted it and added the chili powder and smoked paprika.
- After the seasonings are added and whisked in, this is what it looks like.
- Top with desired toppings.
Just curious how does this queso reheat? W want to make it ahead of time before we travel for our Christmas meal and reheat it there before serving. Thanks for your time
I would reheat slowly on low. My suggestion, make it without heating and heat it up when you are ready to eat it.
