Amazing Air Fried Fish Sticks, Low Carb!!

Low carb, trim healthy mama s amazing air fried fish sticks!

There aren’t a lot of fish recipes on my site because my hubby doesn’t care for fish. I am trying to find ways of getting fish in his diet. This recipe was a hit! Everyone loved it, even Randy. I was so surprised. He says that fish it too fishy and only eats salmon patties or Long John Silvers fish. I finally have a new fish recipe that he loves!

I am so happy with this recipe.

Fish can be a little scary to cook. It is so easy to overcook and have rubbery fish. This turned out perfect. Even if you don’t have an air fryer, you can bake these. I have a convection oven and used the convection setting. This recipe is so easy to make too. Below is a picture of my set-up that made this so easy to put the coating on.

I used 3 different containers to bread the fish.

My eggs are in a flat very small rectangular dish. I really like using this for the liquids when breading things. I had the fish prepared and at the top and moved left to right through the breading items. And to the far right, I had the prepared baking sheet. Doing it this way made it really easy. Let’s talk fish. I used barramundi that I bought from Costco. I a couple pieces had really thin edges, I trimmed those off. You want to try and make the pieces as uniform as possible so they all cook as evenly as possible.

Low Carb Air Fried Fish

Ingredients

  • 16 oz White Fish, I used barramundi, cut into "sticks"
  • 2 C Pork Rinds, crushed You might need more depending on crushed your pork rinds are
  • 1/3 C Heaping Cup of Almond Flour
  • 1 t Smoked Paprika
  • 1 t Garlic Powder
  • 1 t Salt
  • 1/2 t Pepper
  • 3 Eggs, beaten

Instructions

  • In one bowl, place the almond flour and seasonings, stir. In one container place the beaten eggs. And finally in a plate place the pork rinds.
  • Here's a close up of the fish.
  • Place a piece of the fish in the almond flour and coat.
  • And then carefully dip into the beaten eggs.
  • And then carefully coat with the pork rinds. My pork rinds weren't crushed enough but they still worked great.
  • Do the same procedure with all of your fish sticks. I used a lined baking sheet.
  • Set air fryer at 380 degrees. Bake fish sticks for 4 minutes, flip and bake another 4 minutes. When they are done, they will flake easily. I picked one up and it broke in half, so I knew they were done. If yours aren't quite done, check every two minutes.
  • Serve with desired sides and tartar sauce.
