Crockpot Low Carb King Ranch Chicken
I LOVE King Ranch Chicken but I haven’t made it since eating the trim healthy mama way.
That has now changed. I not only found a way to make it low carb, thm s, I made it in my crockpot!! It ended up working out perfect. I am so happy this recipe is back in my life. It was a hit with the family too. If you want to make your family happy, put this on your next menu. I also made this even easier! I have been buying at least one rotisserie chicken when we go to Costco. I take the chicken and debone it. I use it in 2 different recipes during the week. This worked out perfect! The meat ends up being $2.50 per meal, and I didn’t do any of the cooking.

I have been looking at ways to make my kitchen time more streamlined. I found 5 crockpot recipes and prepped all five. I bought a 4 pack of shoeboxes (I don’t know what else to call those little totes). One recipe I prepped in a crockpot base and the other 4 went into the totes. Everything that was going into the crockpot went inside the container. This made my week go so smoothly! My boys could assemble the meal if I needed them to. We had a chicken taco soup, crustless pizza, chili, Mississippi roast, and King Ranch Chicken. I plan to keep coming up with 5 meal sets like this. This is similar to my 5 meals prepped in an hour. I absolutely loved knowing that not only was dinner prepped, but I only had pull out a tote and throw everything into the crockpot. Here is a picture of the contents of the King Ranch Chicken tote.
If you are wanting something easy and kid friendly, this is it.
This was a huge hit with everyone at my house. I didn’t make the dish spicy because I have one that is really sensitive to heat. You can easily throw in some pickled jalapenos if you would like. We just put some on top of ours. Top this with your favorite toppings, We did cilantro, sliced black olives, avocado, and jalapenos. However you top your bowl, I am sure it will be delicious!
Low Carb Crockpot King Ranch Chicken

- Crockpot
Ingredients
- 3 C Cooked Chicken, diced or shredded
- 1/2 C Chicken Broth
- 4 oz Can Chopped Green Chilies
- 10 oz Can Diced Tomatoes with Green Chilies, drained
- 1 Med Onion, diced
- 1 Med Bell Pepper, diced
- 1 T Olive Oil
- 1 T Chili Powder
- 1 t Cumin
- 1 t Salt
- 1/2 t Ground Black Pepper
- 1/2 C Heavy Cream
- 2 C Shredded Cheese- cheddar, Monterey jack, etc.
- Low Carb Tortillas.
Instructions
- In a medium skillet add your olive oil and cook your onion and bell pepper.
- Mix together the heavy cream, chicken broth, and seasonings.
- To a medium to large bowl add chicken, rotel, cooked onion and bell pepper, and green chilies.
- Stir well. Add the heavy cream mixture and the 1 1/2 cups of the shredded cheese. You don't want this to be too wet but not too dry. You can add more broth of cream if you feel like it needs it.
- Spray the bottom of the crockpot with non-stick cooking spray. Place low carb tortillas in the bottom. Depending on the size you have, you may need to tear and piece it together. You want the entire bottom covered. Add half of the chicken mixture and top with another layer of the low carb tortillas. Top the tortillas with the rest of the chicken mixture and then the rest of the cheese.
- Cook on low 3-4 hours.
Were you able to put those totes in your refrigerator?
Yes I was. They aren’t too big and fit perfectly. If you don’t have room for totes, I would clear part of a shelf and organize that area to hold your items. This was really helpful and made our dinners for the week super simple.
